  • 1/2 tbsp minced garlic
  • 4 cups chicken broth
  • 1 1/2 cups whole milk
  • 1 tsp Italian seasoning
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes optional
  • 56 oz lasagna sheets broken into pieces
  • 1 cup whole milk cottage cheese
  • 2 tbsp parsley finely chopped
  • 1/4 cup grated Parmesan

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken breasts, season with Italian seasoning, paprika, garlic powder, salt, and pepper. Cook until browned, then remove and set aside.
  2. In the same pot, add minced garlic and sauté for 30 seconds.
  3. Pour in chicken broth and milk, stirring to combine. Add Italian seasoning, dried oregano, salt, pepper, and optional red pepper flakes. Bring to a gentle simmer.
  4. Break lasagna sheets into pieces and add to the soup. Cook until noodles are al dente, about 8-10 minutes.
  5. Stir in cottage cheese until melted and creamy. Return chicken to the pot and heat through.
  6. Garnish with chopped parsley and grated Parmesan before serving.

Notes

For a lighter version, substitute half-and-half for whole milk and use reduced-fat cottage cheese. Leftovers store well in the refrigerator for up to 3 days; reheat gently on the stove, adding a splash of broth if needed.
