Ingredients

- 2 cups shredded chicken or turkey
- 1 tablespoon olive oil or avocado oil
- 1 sweet onion, diced
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 1 (15 oz) can diced tomatoes
- 2 cups chicken or turkey broth
- 1 (15 oz) can black beans, rinsed and drained
- 1 1/2 cups frozen sweet corn (or 15 oz can), rinsed and drained
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes
- Sea salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and bell pepper, sauté until soft.
- Stir in garlic and cook for 1 minute.
- Add shredded chicken, diced tomatoes, broth, black beans, corn, and all the spices.
- Bring to a simmer and cook for 20–25 minutes to let the flavors meld.
- Adjust seasoning with salt and pepper as needed.
- Serve hot with your choice of toppings.
Notes
Optional toppings include shredded cheese, avocado, tortilla chips, cilantro, sour cream, Greek yogurt, or sliced jalapeño.
