  • 2 cups chicken or turkey broth
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 1/2 cups frozen sweet corn (or 15 oz can), rinsed and drained
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • Sea salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and bell pepper, sauté until soft.
  3. Stir in garlic and cook for 1 minute.
  4. Add shredded chicken, diced tomatoes, broth, black beans, corn, and all the spices.
  5. Bring to a simmer and cook for 20–25 minutes to let the flavors meld.
  6. Adjust seasoning with salt and pepper as needed.
  7. Serve hot with your choice of toppings.
