Description

Ingredients

  • 4 chicken thighs or drumsticks
  • 2 cups cooked white rice
  • 1 1/2 cups mole sauce
  • 1 tablespoon vegetable oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add chopped onion and cook until softened.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add chicken pieces and brown on all sides.
  5. Pour in mole sauce and chicken broth.
  6. Season with salt and black pepper.
  7. Cover and simmer for 30–35 minutes until chicken is tender.
  8. Fluff the cooked rice and divide among plates.
  9. Spoon the chicken mole over the rice.
  10. Serve hot for dinner.
