- 4 chicken thighs or drumsticks
- 2 cups cooked white rice
- 1 1/2 cups mole sauce
- 1 tablespoon vegetable oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add chopped onion and cook until softened.
- Stir in minced garlic and cook for 30 seconds.
- Add chicken pieces and brown on all sides.
- Pour in mole sauce and chicken broth.
- Season with salt and black pepper.
- Cover and simmer for 30–35 minutes until chicken is tender.
- Fluff the cooked rice and divide among plates.
- Spoon the chicken mole over the rice.
- Serve hot for dinner.
