  • 270 g soba or rice noodles
  • 400 g cooked shredded chicken
  • 2 tbsp natural peanut butter
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1 lime (juiced)
  • 2 tbsp sesame seeds
  • 1 large carrot (sliced)
  • 1 cup bok choy
  • 1 red chilli (finely chopped, optional)
  • 1 cup snow peas
  • 1 cup bean sprouts
  • 1/4 cup coriander (chopped)
  • Olive oil spray

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, and lime juice to make the satay sauce.
  3. Heat a large skillet over medium-high heat. Spray with olive oil and sauté carrot, bok choy, and snow peas for 3-4 minutes until crisp-tender.
  4. Add cooked chicken and satay sauce to skillet. Stir until well combined and heated through.
  5. Toss in cooked noodles, bean sprouts, and chili (if using). Mix gently until everything is coated in sauce.
  6. Garnish with sesame seeds and fresh coriander before serving.

Notes

Tips: For extra crunch, add chopped roasted peanuts. Substitutions: Use almond butter instead of peanut butter, or tofu instead of chicken. Storage: Keeps refrigerated in airtight container for up to 3 days. Add a splash of water when reheating.
