- 270 g soba or rice noodles
- 400 g cooked shredded chicken
- 2 tbsp natural peanut butter
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1 lime (juiced)
- 2 tbsp sesame seeds
- 1 large carrot (sliced)
- 1 cup bok choy
- 1 red chilli (finely chopped, optional)
- 1 cup snow peas
- 1 cup bean sprouts
- 1/4 cup coriander (chopped)
- Olive oil spray
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- In a bowl, whisk together peanut butter, soy sauce, sesame oil, and lime juice to make the satay sauce.
- Heat a large skillet over medium-high heat. Spray with olive oil and sauté carrot, bok choy, and snow peas for 3-4 minutes until crisp-tender.
- Add cooked chicken and satay sauce to skillet. Stir until well combined and heated through.
- Toss in cooked noodles, bean sprouts, and chili (if using). Mix gently until everything is coated in sauce.
- Garnish with sesame seeds and fresh coriander before serving.
Notes
Tips: For extra crunch, add chopped roasted peanuts. Substitutions: Use almond butter instead of peanut butter, or tofu instead of chicken. Storage: Keeps refrigerated in airtight container for up to 3 days. Add a splash of water when reheating.
