  • ¾ cup dry white wine, or broth
  • ⅛ teaspoon crushed red pepper flakes, or more to taste
  • 1 cup cherry tomatoes, or grape tomatoes, halved
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups baby spinach
  • 3 tablespoons chopped parsley, plus more for garnish

Instructions

  1. Cook the pasta according to package directions, drain, and set aside.
  2. Season the chicken breasts with salt and pepper. Heat olive oil spray in a large skillet over medium‑high heat and cook the chicken until golden and cooked through, about 5‑6 minutes per side. Remove and set aside.
  3. In the same skillet, add 1 tablespoon butter and the sliced garlic; sauté until fragrant, about 30 seconds.
  4. Deglaze with the white wine, scraping up browned bits, and add the red pepper flakes; simmer until reduced by half.
  5. Stir in lemon juice, cherry tomatoes, and baby spinach; cook until the spinach wilts.
  6. Return the chicken to the pan, add the remaining butter and chopped parsley, and toss to combine. Serve the scampi over the pasta.
