A light yet deeply comforting Chinese soup featuring tender pork meatballs and delicate winter melon simmered in a savory, aromatic broth.
Ingredients

- 500 g winter melon, peeled and cubed
- 250 g ground pork
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1 egg white
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 6 cups chicken broth
- 1/2 teaspoon white pepper
- Salt, to taste
- 2 green onions, sliced
- Fresh cilantro, for garnish
Instructions
- In a bowl, combine ground pork, soy sauce, sesame oil, cornstarch, egg white, garlic, and ginger.
- Mix well and form the mixture into small meatballs.
- Bring the chicken broth to a gentle boil in a pot.
- Add the winter melon cubes and simmer for 5 minutes.
- Carefully add the meatballs to the pot.
- Simmer for 10–12 minutes until meatballs are fully cooked and winter melon is tender.
- Season with salt and white pepper to taste.
- Remove from heat and garnish with green onions and cilantro before serving.
Notes
Winter melon becomes translucent and very tender when cooked. Avoid overboiling to keep the meatballs juicy.
