- 4 salmon fillets (skin removed)
- 2 tablespoons olive oil
- 1 tablespoon chipotle chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Juice and zest of 2 limes
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded red cabbage
- 1/2 cup fresh cilantro leaves
- 1 avocado, sliced
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon lime juice (for sauce)
Instructions
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix olive oil, chipotle chili powder, cumin, garlic powder, paprika, lime zest and juice, salt, and pepper.
- Brush the spice mixture over the salmon fillets.
- Place salmon on a baking tray lined with parchment paper and bake for 12-15 minutes or until cooked through and flaky.
- While the salmon bakes, combine sour cream or Greek yogurt with lime juice to make a quick sauce.
- Warm tortillas in a dry skillet or microwave until pliable.
- Flake the cooked salmon and assemble tacos with cabbage, salmon, avocado slices, cilantro, and a drizzle of lime sauce.
- Serve immediately with extra lime wedges if desired.
Notes
Adjust chipotle level to taste. For extra crunch, lightly toast tortillas before assembling.
