Ingredients

  • 4 salmon fillets (skin removed)
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Juice and zest of 2 limes
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup fresh cilantro leaves
  • 1 avocado, sliced
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice (for sauce)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix olive oil, chipotle chili powder, cumin, garlic powder, paprika, lime zest and juice, salt, and pepper.
  3. Brush the spice mixture over the salmon fillets.
  4. Place salmon on a baking tray lined with parchment paper and bake for 12-15 minutes or until cooked through and flaky.
  5. While the salmon bakes, combine sour cream or Greek yogurt with lime juice to make a quick sauce.
  6. Warm tortillas in a dry skillet or microwave until pliable.
  7. Flake the cooked salmon and assemble tacos with cabbage, salmon, avocado slices, cilantro, and a drizzle of lime sauce.
  8. Serve immediately with extra lime wedges if desired.

Notes

Adjust chipotle level to taste. For extra crunch, lightly toast tortillas before assembling.
