Description

A decadent twist on a holiday classic, this Chocolate and Cherry Christmas Pudding is rich, fruity, and full of festive flavor with a luscious chocolate finish.


Ingredients

  • 1/2 cup dried cherries
  • 1/2 cup raisins
  • 1/2 cup chopped dried figs
  • 1/4 cup brandy or orange juice
  • 1/2 cup chopped dark chocolate
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine dried cherries, raisins, and figs with brandy or orange juice. Let soak for at least 1 hour or overnight.
  2. Grease a pudding basin or heatproof bowl and line the bottom with parchment paper.
  3. In a large bowl, mix together brown sugar, flour, baking soda, cinnamon, nutmeg, salt, and breadcrumbs.
  4. Stir in the soaked fruits, chopped chocolate, eggs, melted butter, and vanilla. Mix until well combined.
  5. Spoon the mixture into the prepared basin and level the top.
  6. Cover with a layer of parchment paper and foil, securing tightly with string.
  7. Place in a large pot with enough water to come halfway up the sides of the basin. Cover pot with a lid.
  8. Steam over low heat for 2.5 to 3 hours, checking water level occasionally and topping up as needed.
  9. Let pudding cool, then store in a cool, dry place. Reheat by steaming for 1 hour before serving.

Notes

Serve with brandy cream, custard, or a scoop of ice cream. Can be made ahead and stored for up to 1 month.
