Description

A moist and delicious quick bread packed with shredded zucchini and rich mini chocolate chips, perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup of mini chocolate chips
  • 2 cups shredded zucchini, packed
  • 2 large eggs
  • ⅔ cup neutral oil (safflower, vegetable, etc.)
  • ½ cup brown sugar, packed
  • ½ cup plus 1 tablespoon granulated or turbinado sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan or prepare Souper Cubes trays if freezing.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Stir in the mini chocolate chips and set aside.
  4. In another bowl, combine shredded zucchini, eggs, oil, brown sugar, granulated sugar, and vanilla extract.
  5. Mix the wet ingredients until well combined.
  6. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  7. Pour batter into prepared loaf pan or Souper Cubes trays.
  8. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can freeze individual portions using Souper Cubes 1-cup or 2-cup trays for quick breakfasts or snacks.
