- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup orange juice
- 1 tbsp orange zest
- 1 1/2 cups fresh or frozen cranberries
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla, orange juice, and orange zest.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Fold in cranberries and walnuts (if using).
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, drizzle with an orange glaze made from powdered sugar and orange juice once the loaf has cooled.
