Ingredients

  • 1 sweet apple (Honey Crisp or Gala), peeled, cored, seeded and diced
  • 1 1/2 tablespoons raw sugar
  • 1 tablespoon golden raisins
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • 2 cups 0% fat Stonyfield plain yogurt
  • 4 tablespoons chopped walnuts or pecans

Instructions

  1. Combine diced apples, raw sugar, raisins, cinnamon, and nutmeg in a small saucepan. Cook over medium heat for 5 minutes until apples soften and mixture becomes syrupy. Remove from heat and let cool slightly.
  2. Divide yogurt between two serving bowls. Top each with equal portions of the warm apple mixture.
  3. Sprinkle chopped walnuts or pecans over each bowl.
  4. Serve immediately while the apple mixture is still warm, or chill for a cold breakfast option.

Notes

Tips: For vegan version, use coconut yogurt. Try pears instead of apples for variety. Storage: Apple compote can be refrigerated for up to 3 days. Add to yogurt just before serving.
