- 1 sweet apple (Honey Crisp or Gala), peeled, cored, seeded and diced
- 1 1/2 tablespoons raw sugar
- 1 tablespoon golden raisins
- 1/4 teaspoon cinnamon
- Pinch of nutmeg
- 2 cups 0% fat Stonyfield plain yogurt
- 4 tablespoons chopped walnuts or pecans
Instructions
- Combine diced apples, raw sugar, raisins, cinnamon, and nutmeg in a small saucepan. Cook over medium heat for 5 minutes until apples soften and mixture becomes syrupy. Remove from heat and let cool slightly.
- Divide yogurt between two serving bowls. Top each with equal portions of the warm apple mixture.
- Sprinkle chopped walnuts or pecans over each bowl.
- Serve immediately while the apple mixture is still warm, or chill for a cold breakfast option.
Notes
Tips: For vegan version, use coconut yogurt. Try pears instead of apples for variety. Storage: Apple compote can be refrigerated for up to 3 days. Add to yogurt just before serving.
