Description

A comforting, velvety soup made with slow-roasted garlic, tender potatoes, and a splash of cream for timeless flavor.


Ingredients

  • 2 whole heads garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 large potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
  3. In a large pot, melt butter over medium heat. Add onion and cook until translucent.
  4. Add potatoes and vegetable broth. Simmer until potatoes are tender, about 15 minutes.
  5. Squeeze roasted garlic cloves into the pot and stir.
  6. Blend with an immersion blender until smooth.
  7. Stir in heavy cream, then season with salt and pepper.
  8. Serve hot, garnished with fresh thyme.

Notes

For a lighter version, swap heavy cream for half-and-half or whole milk.
