- 2 whole heads garlic
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion, diced
- 2 large potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions
- Preheat oven to 200°C (400°F).
- Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
- In a large pot, melt butter over medium heat. Add onion and cook until translucent.
- Add potatoes and vegetable broth. Simmer until potatoes are tender, about 15 minutes.
- Squeeze roasted garlic cloves into the pot and stir.
- Blend with an immersion blender until smooth.
- Stir in heavy cream, then season with salt and pepper.
- Serve hot, garnished with fresh thyme.
Notes
For a lighter version, swap heavy cream for half-and-half or whole milk.
