- 1 lb. corned beef, sliced or finely chopped
- 1/3 cup Guinness beer
- 8 (6″) flour tortillas, divided
- 4 oz. Swiss cheese, shredded (about 1 c.), divided
Instructions
- In a small bowl, whisk together mayonnaise, apple cider vinegar, chopped cilantro, caraway seeds, granulated sugar, and kosher salt to create a creamy dressing.
- Heat neutral oil in a skillet over medium-high heat. Add the sliced corned beef and sauté until browned, about 4-5 minutes.
- Stir in Guinness beer, scraping up any browned bits, and let simmer for 2 minutes to infuse flavor.
- Meanwhile, in a separate pan, quickly sauté shredded carrots and cabbage with a pinch of salt until just tender, about 3 minutes.
- To assemble each taco, place a spoonful of the beef mixture on a tortilla, top with sautéed cabbage and carrots, add a generous spoonful of sauerkraut, and sprinkle with shredded Swiss cheese.
