- 4 salmon fillets (skin-on, thick cut)
- 1 cup cream cheese, softened
- 1/2 cup chopped spinach (fresh or thawed frozen)
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped sun-dried tomatoes
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, chopped spinach, Parmesan cheese, sun-dried tomatoes, garlic, lemon juice, salt, and pepper. Mix until well combined.
- Using a sharp knife, carefully slice a pocket into the side of each salmon fillet, being careful not to cut all the way through.
- Stuff each salmon fillet with the cream cheese mixture.
- Place the stuffed fillets on a lined baking sheet and drizzle with olive oil.
- Bake for 18-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh dill or parsley before serving if desired.
Notes
You can prepare the stuffing mixture a day ahead to save time. Serve with rice, quinoa, or roasted vegetables for a complete meal.
