- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 lb ground beef (lean)
- 2 cloves garlic, minced
- 1 small onion, diced
- Salt and pepper, to taste
- 1 cup low-fat cottage cheese
- 2 green onions, sliced (for garnish)
- Optional: hot sauce or chili flakes for spice
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
- Meanwhile, heat a skillet over medium heat. Add ground beef, onion, and garlic, cooking until beef is browned and onion is soft, about 7–8 minutes. Drain excess fat if necessary.
- Season beef with salt and pepper to taste.
- Assemble bowls by layering roasted sweet potatoes on the bottom, topping with ground beef, and finishing with a generous scoop of cottage cheese.
- Garnish with sliced green onions and optional hot sauce or chili flakes. Serve warm.
Notes
