Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 lb ground beef (lean)
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • Salt and pepper, to taste
  • 1 cup low-fat cottage cheese
  • 2 green onions, sliced (for garnish)
  • Optional: hot sauce or chili flakes for spice

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
  2. Meanwhile, heat a skillet over medium heat. Add ground beef, onion, and garlic, cooking until beef is browned and onion is soft, about 7–8 minutes. Drain excess fat if necessary.
  3. Season beef with salt and pepper to taste.
  4. Assemble bowls by layering roasted sweet potatoes on the bottom, topping with ground beef, and finishing with a generous scoop of cottage cheese.
  5. Garnish with sliced green onions and optional hot sauce or chili flakes. Serve warm.

Notes
