Description

A hearty cowboy-style meatloaf layered with creamy mashed potatoes, crispy onions, and melted cheese for the ultimate comfort casserole.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup BBQ sauce
  • 1/2 cup diced onion
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy fried onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground beef, breadcrumbs, egg, diced onion, BBQ sauce, salt, and pepper until well combined.
  3. Press the meat mixture evenly into a greased baking dish.
  4. Bake for 25 minutes or until the meatloaf is nearly cooked through.
  5. Spread mashed potatoes evenly over the top of the meatloaf layer.
  6. Sprinkle shredded cheddar cheese over the potatoes.
  7. Top with crispy fried onions.
  8. Return to the oven and bake for an additional 10–15 minutes, until cheese is melted and bubbly.
  9. Let cool slightly before slicing and serving.

Notes

For extra flavor, mix some bacon bits into the mashed potatoes or drizzle extra BBQ sauce before baking.
