- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup BBQ sauce
- 1/2 cup diced onion
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup crispy fried onions
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground beef, breadcrumbs, egg, diced onion, BBQ sauce, salt, and pepper until well combined.
- Press the meat mixture evenly into a greased baking dish.
- Bake for 25 minutes or until the meatloaf is nearly cooked through.
- Spread mashed potatoes evenly over the top of the meatloaf layer.
- Sprinkle shredded cheddar cheese over the potatoes.
- Top with crispy fried onions.
- Return to the oven and bake for an additional 10–15 minutes, until cheese is melted and bubbly.
- Let cool slightly before slicing and serving.
Notes
For extra flavor, mix some bacon bits into the mashed potatoes or drizzle extra BBQ sauce before baking.
