Description

A warm and comforting roasted garlic and potato soup, creamy and hearty with a rich depth of flavor.


Ingredients

Scale
  • 2 heads of garlic
  • 2 tbsp olive oil
  • 1 kg potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Slice the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and caramelized.
  3. In a large pot, melt butter and sauté the onion until translucent.
  4. Add the diced potatoes and vegetable broth, bring to a boil, then simmer for 20 minutes until potatoes are tender.
  5. Squeeze the roasted garlic cloves out of their skins and add to the pot.
  6. Blend the soup with an immersion blender until smooth and creamy.
  7. Stir in milk or cream, season with salt and pepper.
  8. Garnish with fresh thyme or parsley before serving.

Notes

For an extra creamy texture, add a dollop of sour cream or Greek yogurt before serving.
