A warm and comforting roasted garlic and potato soup, creamy and hearty with a rich depth of flavor.
Ingredients
Scale
- 2 heads of garlic
- 2 tbsp olive oil
- 1 kg potatoes, peeled and diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup milk or cream
- 2 tbsp butter
- Salt and pepper, to taste
- Fresh thyme or parsley, for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Slice the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and caramelized.
- In a large pot, melt butter and sauté the onion until translucent.
- Add the diced potatoes and vegetable broth, bring to a boil, then simmer for 20 minutes until potatoes are tender.
- Squeeze the roasted garlic cloves out of their skins and add to the pot.
- Blend the soup with an immersion blender until smooth and creamy.
- Stir in milk or cream, season with salt and pepper.
- Garnish with fresh thyme or parsley before serving.
Notes
For an extra creamy texture, add a dollop of sour cream or Greek yogurt before serving.
