- 1 1/2 pounds ground beef
- 1/2 pound ground pork
- 3/4 cup crushed Ritz crackers
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 2 large eggs
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon yellow mustard
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, ground pork, crushed Ritz crackers, onion, bell pepper, eggs, milk, cheddar cheese, salt, pepper, garlic powder, and onion powder.
- Mix just until combined, being careful not to overmix.
- Form the mixture into a loaf shape and place into a greased loaf pan or on a baking sheet lined with parchment paper.
- In a small bowl, mix ketchup, brown sugar, and mustard to make the glaze.
- Spread half of the glaze over the top of the meatloaf.
- Bake for 45 minutes, then add remaining glaze and bake for an additional 15 minutes or until internal temperature reaches 160°F (70°C).
- Let rest 10 minutes before slicing and serving.
Notes
Ritz crackers and cheddar cheese give this meatloaf its signature Crackerbarrel flavor. Serve with mashed potatoes and green beans for a full homestyle meal.
