Description

A festive holiday roast infused with the tart-sweet flavor of cranberries, perfect as a centerpiece for your Christmas dinner table.


Ingredients

  • 1 (3-4 lb) pork loin roast
  • 1 cup fresh or frozen cranberries
  • 1/2 cup cranberry juice
  • 1/4 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season pork roast with salt, pepper, rosemary, and thyme.
  3. In a skillet, heat olive oil over medium-high heat and sear the pork roast on all sides until browned. Transfer to a roasting pan.
  4. In a saucepan, combine cranberries, cranberry juice, balsamic vinegar, brown sugar, Dijon mustard, and garlic. Bring to a simmer and cook until cranberries burst and sauce thickens slightly, about 10 minutes.
  5. Pour half of the cranberry sauce over the pork roast.
  6. Cover with foil and roast for 45 minutes.
  7. Remove foil, pour remaining sauce over the roast, and cook uncovered for an additional 20–30 minutes, or until internal temperature reaches 145°F (63°C).
  8. Let rest for 10 minutes before slicing. Serve with pan sauce.

This roast pairs beautifully with mashed potatoes or roasted vegetables for a complete holiday meal.
