A festive holiday roast infused with the tart-sweet flavor of cranberries, perfect as a centerpiece for your Christmas dinner table.
Ingredients

- 1 (3-4 lb) pork loin roast
- 1 cup fresh or frozen cranberries
- 1/2 cup cranberry juice
- 1/4 cup balsamic vinegar
- 1/4 cup brown sugar
- 1 tbsp Dijon mustard
- 3 cloves garlic, minced
- 1 tsp rosemary
- 1 tsp thyme
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Season pork roast with salt, pepper, rosemary, and thyme.
- In a skillet, heat olive oil over medium-high heat and sear the pork roast on all sides until browned. Transfer to a roasting pan.
- In a saucepan, combine cranberries, cranberry juice, balsamic vinegar, brown sugar, Dijon mustard, and garlic. Bring to a simmer and cook until cranberries burst and sauce thickens slightly, about 10 minutes.
- Pour half of the cranberry sauce over the pork roast.
- Cover with foil and roast for 45 minutes.
- Remove foil, pour remaining sauce over the roast, and cook uncovered for an additional 20–30 minutes, or until internal temperature reaches 145°F (63°C).
- Let rest for 10 minutes before slicing. Serve with pan sauce.
