- 2 heads of garlic
- 3 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup heavy cream
- 4 slices crusty bread
- 1 tablespoon butter
- 1 small onion, diced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 200°C (400°F).
- Slice the tops off the garlic heads, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30–35 minutes until soft.
- In a large pot, heat remaining olive oil and butter over medium heat.
- Add diced onion and cook until translucent.
- Squeeze roasted garlic cloves from their skins into the pot and stir well.
- Pour in vegetable broth, season with salt and pepper, and bring to a simmer for 10 minutes.
- Add heavy cream and stir until heated through.
- Toast bread slices until golden and crispy.
- Serve soup hot with bread slices on top or alongside.
- Garnish with fresh parsley before serving.
Notes
Roasting the garlic brings out its sweetness and depth of flavor. For extra indulgence, top with shredded cheese before serving.
