- 4 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- Season salmon fillets with salt and black pepper.
- Heat olive oil in a large skillet over medium heat.
- Sear salmon fillets 4-5 minutes per side until golden and nearly cooked through. Remove and set aside.
- In the same skillet, sauté garlic for 1 minute until fragrant.
- Add sun-dried tomatoes and cook for another 1-2 minutes.
- Pour in chicken broth and heavy cream, stirring well.
- Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until the sauce thickens slightly.
- Return salmon fillets to the skillet and spoon sauce over them.
- Simmer for 3-5 minutes until salmon is cooked through.
- Garnish with fresh basil before serving.
Notes
Best served with pasta, rice, or crusty bread to soak up the creamy sauce.
