Description

Tender salmon fillets simmered in a rich, creamy garlic sun-dried tomato sauce – a restaurant-worthy dish made easily at home.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season salmon fillets with salt and black pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear salmon fillets 4-5 minutes per side until golden and nearly cooked through. Remove and set aside.
  4. In the same skillet, sauté garlic for 1 minute until fragrant.
  5. Add sun-dried tomatoes and cook for another 1-2 minutes.
  6. Pour in chicken broth and heavy cream, stirring well.
  7. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until the sauce thickens slightly.
  8. Return salmon fillets to the skillet and spoon sauce over them.
  9. Simmer for 3-5 minutes until salmon is cooked through.
  10. Garnish with fresh basil before serving.

Notes

Best served with pasta, rice, or crusty bread to soak up the creamy sauce.
