A refreshing and creamy summer salsa bursting with sweet peaches, creamy avocado, and a kick of jalapeño.


Ingredients

  • 2 medium ripe but still slightly firm peaches, diced
  • 1 ripe but still slightly firm large avocado, diced
  • 1 large ear corn, kernels cut off (about ¾ cup corn)
  • 3 tablespoons finely diced red onion
  • 1 jalapeño, seeded and diced
  • 2 tablespoons finely diced cilantro
  • 1 lime, juiced
  • Salt & freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine diced peaches, avocado, corn kernels, red onion, jalapeño, and cilantro.
  2. Drizzle with fresh lime juice.
  3. Gently toss everything together to mix well.
  4. Season with salt and freshly ground black pepper to taste.
  5. Serve immediately or refrigerate for up to 2 hours for flavors to meld.
