- 1 large ear corn, kernels cut off (about ¾ cup corn)
- 3 tablespoons finely diced red onion
- 1 jalapeño, seeded and diced
- 2 tablespoons finely diced cilantro
- 1 lime, juiced
- Salt & freshly ground black pepper, to taste
Instructions
- In a large bowl, combine diced peaches, avocado, corn kernels, red onion, jalapeño, and cilantro.
- Drizzle with fresh lime juice.
- Gently toss everything together to mix well.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately or refrigerate for up to 2 hours for flavors to meld.
