Ingredients

- 2 cups dried split peas, rinsed
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 bay leaf
- 1 cup heavy cream or coconut cream
- Zest and juice of 1 Meyer lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sautΓ© until softened.
- Stir in garlic and cook for 1 minute.
- Add split peas, vegetable broth, and bay leaf.
- Bring to a boil, then reduce heat and simmer 60β70 minutes until peas are tender.
- Remove bay leaf and blend soup until smooth.
- Stir in cream, Meyer lemon zest, and juice.
- Season with salt and pepper.
- Simmer 5 more minutes before serving.
Notes
Adjust lemon flavor to taste. For a vegan option, use coconut cream instead of dairy cream.
