Ingredients

  • 2 cups dried split peas, rinsed
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 cup heavy cream or coconut cream
  • Zest and juice of 1 Meyer lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sautΓ© until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add split peas, vegetable broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer 60–70 minutes until peas are tender.
  6. Remove bay leaf and blend soup until smooth.
  7. Stir in cream, Meyer lemon zest, and juice.
  8. Season with salt and pepper.
  9. Simmer 5 more minutes before serving.

Notes

Adjust lemon flavor to taste. For a vegan option, use coconut cream instead of dairy cream.
