- 2 tablespoons butter
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 3 cups cooked turkey, shredded
- 4 cups chicken or turkey broth
- 1 cup heavy cream
- 1 cup diced potatoes
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt to taste
- Black pepper to taste
- 1 cup frozen peas
Instructions
- Melt the butter in a large pot over medium heat.
- Add the onion, carrots, and celery, and cook until softened.
- Stir in the garlic and cook for 30 seconds.
- Add the cooked turkey and potatoes.
- Pour in the broth and bring to a gentle boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in the heavy cream, thyme, and rosemary.
- Season with salt and black pepper.
- Add the frozen peas and simmer for 5 more minutes.
- Serve hot.
Notes
You can substitute half-and-half for heavy cream for a lighter soup. This soup thickens as it sits.
