Ingredients

  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 3 cups cooked turkey, shredded
  • 4 cups chicken or turkey broth
  • 1 cup heavy cream
  • 1 cup diced potatoes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste
  • 1 cup frozen peas

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion, carrots, and celery, and cook until softened.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add the cooked turkey and potatoes.
  5. Pour in the broth and bring to a gentle boil.
  6. Reduce heat and simmer until potatoes are tender.
  7. Stir in the heavy cream, thyme, and rosemary.
  8. Season with salt and black pepper.
  9. Add the frozen peas and simmer for 5 more minutes.
  10. Serve hot.

Notes

You can substitute half-and-half for heavy cream for a lighter soup. This soup thickens as it sits.
