Crispy on the outside, tender inside – these baked vegan zucchini fries are the ultimate healthy snack or side dish with a flavorful crunchy coating.


Ingredients

Scale
  • 2 small to medium firm zucchini (about 1 and ½ lbs)
  • cooking oil spray for baking sheet and zucchini tops
  • Batter:
  • 1 cup unsweetened non dairy plant milk (almond, soy, etc.)
  • 1 cup all purpose flour
  • 1 tablespoon yellow mustard
  • ½ teaspoon salt
  • Seasoned bread crumbs:
  • 1 and ½ cups panko breadcrumbs
  • 3 tablespoons nutritional yeast
  • ¾ teaspoon seasoning salt or ½ teaspoon regular salt
  • ½ teaspoon Italian seasoning
  • 1 teaspoon granulated onion
  • 1 teaspoon granulated garlic
  • ½ teaspoon chili powder
  • For serving:
  • 5 minute vegan ranch dressing for dipping (optional)
  • warm marinara sauce (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper. Spray lightly with cooking oil.
  2. Cut zucchini into fry-sized sticks, about ½ inch thick.
  3. In a bowl, whisk together the plant milk, flour, mustard, and salt to form a smooth batter.
  4. In another bowl, combine panko breadcrumbs, nutritional yeast, seasoning salt, Italian seasoning, granulated onion, granulated garlic, and chili powder.
  5. Dip each zucchini stick into the batter, then roll in breadcrumb mixture to coat thoroughly.
  6. Place coated zucchini sticks on the prepared baking sheet. Spray tops lightly with cooking oil.
  7. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through for even baking.
  8. Serve hot with vegan ranch or warm marinara sauce for dipping.
