- 6 bone-in, skin-on chicken thighs
- 250g mushrooms, sliced
- 300ml heavy cream
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
- Season the chicken thighs generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Place chicken thighs skin-side down and sear until golden and crispy.
- Flip the chicken and cook for a few minutes, then remove from the skillet.
- Add butter to the same skillet and sauté the onion until soft.
- Add garlic and cook briefly until fragrant.
- Add mushrooms and cook until tender and lightly browned.
- Stir in the heavy cream and dried thyme.
- Return the chicken thighs to the skillet, skin-side up.
- Reduce heat and simmer until the chicken is fully cooked and the sauce thickens.
- Garnish with fresh parsley before serving.
Notes
Do not overcrowd the pan to keep the chicken skin crispy. Serve with mashed potatoes, rice, or pasta to soak up the sauce.
