Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 250g mushrooms, sliced
  • 300ml heavy cream
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Season the chicken thighs generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place chicken thighs skin-side down and sear until golden and crispy.
  4. Flip the chicken and cook for a few minutes, then remove from the skillet.
  5. Add butter to the same skillet and sauté the onion until soft.
  6. Add garlic and cook briefly until fragrant.
  7. Add mushrooms and cook until tender and lightly browned.
  8. Stir in the heavy cream and dried thyme.
  9. Return the chicken thighs to the skillet, skin-side up.
  10. Reduce heat and simmer until the chicken is fully cooked and the sauce thickens.
  11. Garnish with fresh parsley before serving.

Notes

Do not overcrowd the pan to keep the chicken skin crispy. Serve with mashed potatoes, rice, or pasta to soak up the sauce.
