Ultra crispy chicken thighs on the outside and juicy on the inside, coated in golden panko breadcrumbs and perfectly seasoned.

- 6 boneless chicken thighs with skin
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- Season the chicken with salt, pepper, paprika, garlic powder, and onion powder.
- Prepare three bowls: one with flour, one with beaten eggs, and one with panko mixed with Parmesan.
- Dredge each chicken thigh in flour, then dip into the eggs, and coat evenly with the panko mixture.
- Place the chicken on a baking sheet lined with parchment paper.
- Drizzle lightly with olive oil.
- Bake for 35–40 minutes until golden brown and crispy.
- Let rest for a few minutes before serving.
Notes
For extra crispiness, flip the chicken halfway through baking. Serve with a fresh salad or roasted vegetables.
