  • 1 1/2 tsp fine sea salt, divided
  • 2 large eggs, lightly beaten
  • 1/2 cup chopped green onions
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground black pepper
  • Olive oil for sautéing
  • Sour cream, to serve

Instructions

  1. Grate the zucchini and place in a colander. Sprinkle with 1 tsp salt and let sit for 10 minutes.
  2. After 10 minutes, squeeze out as much liquid as possible from the zucchini using a clean kitchen towel.
  3. Transfer the zucchini to a large bowl. Add eggs, green onions, flour, baking powder, remaining 1/2 tsp salt, and pepper. Stir until combined.
  4. Heat olive oil in a large skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture per fritter into the skillet, flattening slightly with a spatula.
  6. Cook for 3–4 minutes on each side, until golden brown and crispy.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve warm with sour cream.

Notes

Be sure to remove as much moisture from the zucchini as possible for crispy fritters.
