Description

Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, avocado, green onions

Instructions

  1. Add black beans, diced tomatoes, tomato sauce, bell pepper, onion, garlic, and vegetable broth to the crock pot.
  2. Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  3. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  4. Taste and adjust seasoning if needed.
