- 2 boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 2 cups broccoli florets
- 1 can (10.5 oz) cream of chicken soup
- 1 ½ cups shredded cheddar cheese
- 1 small onion, chopped
- 2 cups chicken broth
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the bottom of the crock pot.
- Add uncooked rice, chopped onion, and broccoli florets over the chicken.
- In a bowl, mix cream of chicken soup, chicken broth, garlic powder, salt, and pepper.
- Pour the mixture over the ingredients in the crock pot.
- Cover and cook on low for 4-5 hours or until chicken is cooked and rice is tender.
- Remove chicken, shred it with forks, and return it to the crock pot.
- Add shredded cheddar cheese and stir until melted and well combined.
- Serve warm and enjoy!
Notes
You can substitute cream of chicken soup with cream of mushroom or homemade versions for different flavor. Use instant rice only if adding at the end of cooking.
