Description

All the comforting flavors of classic lasagna in a warm, hearty soup made effortlessly in the crock pot. Perfect for busy days and cozy nights.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a skillet over medium heat, cook ground beef with chopped onion until browned. Drain excess fat.
  2. Add minced garlic and cook for 1 minute.
  3. Transfer beef mixture to the crock pot.
  4. Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, red pepper flakes, salt, and pepper.
  5. Stir to combine, cover, and cook on low for 6–7 hours or high for 3–4 hours.
  6. About 30 minutes before serving, stir in broken lasagna noodles.
  7. Continue cooking until noodles are tender.
  8. In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  9. Ladle soup into bowls and top with a scoop of cheese mixture.
  10. Garnish with fresh herbs and serve hot.

Notes

For a lower-carb version, swap noodles for chopped zucchini. You can also cook the noodles separately to avoid over-softening in the soup.
