All the comforting flavors of classic lasagna in a warm, hearty soup made effortlessly in the crock pot. Perfect for busy days and cozy nights.

- 1 lb ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef broth
- 2 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- In a skillet over medium heat, cook ground beef with chopped onion until browned. Drain excess fat.
- Add minced garlic and cook for 1 minute.
- Transfer beef mixture to the crock pot.
- Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, red pepper flakes, salt, and pepper.
- Stir to combine, cover, and cook on low for 6–7 hours or high for 3–4 hours.
- About 30 minutes before serving, stir in broken lasagna noodles.
- Continue cooking until noodles are tender.
- In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
- Ladle soup into bowls and top with a scoop of cheese mixture.
- Garnish with fresh herbs and serve hot.
Notes
For a lower-carb version, swap noodles for chopped zucchini. You can also cook the noodles separately to avoid over-softening in the soup.
