A classic slow cooker pepper steak made with tender beef strips, bell peppers, and a rich savory sauce that’s perfect served over rice.

- 1 ½ pounds beef sirloin or flank steak, sliced into strips
- 2 bell peppers, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- ¾ cup beef broth
- ¼ cup soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- ½ teaspoon ground ginger
- ¼ teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions
- Slice the beef into thin strips against the grain.
- Add the beef, bell peppers, onion, and garlic to the crock pot.
- In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, sugar, ginger, and black pepper.
- Pour the sauce mixture over the beef and vegetables.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- In a small bowl, mix cornstarch and water until smooth.
- Stir the cornstarch slurry into the crock pot during the last 30 minutes of cooking.
- Cover and continue cooking until the sauce thickens.
- Serve hot over rice or noodles.
Notes
For extra flavor, lightly brown the beef before adding it to the crock pot. Adjust soy sauce to taste for saltiness.
