- 6 medium russet potatoes, peeled and thinly sliced
- 1 medium onion, thinly sliced
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray
Instructions
- Spray the inside of the crock pot with cooking spray.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk, stirring constantly until thickened.
- Stir in garlic powder, salt, and pepper. Remove from heat and mix in cheddar and Parmesan cheese until melted.
- Layer half of the sliced potatoes and onions in the crock pot.
- Pour half of the cheese sauce over the potatoes.
- Repeat with remaining potatoes, onions, and cheese sauce.
- Cover and cook on low for 6–7 hours or until potatoes are tender.
- Let rest for 10 minutes before serving.
Notes
For best results, slice potatoes evenly and thinly. You can add cooked bacon or ham between layers for extra flavor.
