Description
A comforting, full-meal crock pot recipe featuring a tender whole chicken cooked over perfectly seasoned rice for an easy, hearty family dinner.

- 1 whole chicken (4–5 lbs)
- 2 cups long-grain white rice
- 4 cups chicken broth
- 1 onion, diced
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
Instructions
- Rinse the rice and add it to the bottom of the crock pot.
- Add diced onion, carrots, celery, and garlic on top of the rice.
- Pour chicken broth over the vegetables and rice.
- Pat the whole chicken dry and season with paprika, garlic powder, onion powder, thyme, salt, and black pepper.
- Place the seasoned whole chicken on top of the rice mixture.
- Add butter on top of the chicken.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Check that the chicken reaches an internal temperature of 165°F.
- Fluff the rice before serving and spoon vegetables alongside.
Notes
For extra flavor, sear the chicken in a pan before placing it in the crock pot. Long-grain rice works best to prevent mushiness.
