Description

A comforting, full-meal crock pot recipe featuring a tender whole chicken cooked over perfectly seasoned rice for an easy, hearty family dinner.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Rinse the rice and add it to the bottom of the crock pot.
  2. Add diced onion, carrots, celery, and garlic on top of the rice.
  3. Pour chicken broth over the vegetables and rice.
  4. Pat the whole chicken dry and season with paprika, garlic powder, onion powder, thyme, salt, and black pepper.
  5. Place the seasoned whole chicken on top of the rice mixture.
  6. Add butter on top of the chicken.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  8. Check that the chicken reaches an internal temperature of 165°F.
  9. Fluff the rice before serving and spoon vegetables alongside.

Notes

For extra flavor, sear the chicken in a pan before placing it in the crock pot. Long-grain rice works best to prevent mushiness.
