Ingredients

  • 1 pound ground Beef, 93% lean
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 small onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 15 ounce can reduced-sodium black beans, rinsed, drained
  • 1 10 ounce can mild diced tomatoes with green chilies, drained
  • 1/2 cup canned tomato sauce
  • 3/4 cup light beer such as corona light, or 3/4 cups reduced-sodium beef broth
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Black pepper, to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks. Drain any excess fat.
  2. Transfer the beef to the crockpot.
  3. Add chopped onion, bell pepper, black beans, diced tomatoes, tomato sauce, and beer or broth to the crockpot.
  4. Season with salt, cumin, chili powder, paprika, garlic powder, and black pepper to taste.
  5. Stir well to combine all ingredients.
  6. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  7. Adjust seasoning to taste before serving. Serve hot.

For a gluten-free version, ensure your beef broth is certified GF and skip the beer.
