Ingredients

  • 4 cups fresh broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups shredded carrots
  • 4 cups chicken or vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp nutmeg
  • 2 cups half-and-half or whole milk
  • 2 tbsp cornstarch (optional, for thickening)
  • 3 cups shredded cheddar cheese
  • 2 tbsp butter

Instructions

  1. Add broccoli, onion, garlic, carrots, broth, salt, pepper, paprika, and nutmeg to the Crockpot. Stir to combine.
  2. Cover and cook on low for 5–6 hours or high for 3–4 hours, until vegetables are tender.
  3. Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks if desired.
  4. In a small bowl, whisk cornstarch with half-and-half (if using). Stir into the Crockpot.
  5. Add butter and shredded cheese. Stir until melted and smooth.
  6. Cook on low for another 15–20 minutes, then serve hot.

Notes

Use sharp cheddar for the best flavor. This soup freezes well and can be reheated on the stovetop.
