A comforting, easy Crockpot Chicken Dinner made with tender chicken, hearty vegetables, and simple seasonings for a complete one-pot meal.
Ingredients

- 4 chicken breasts or thighs
- 4 large carrots, sliced
- 3 potatoes, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 2 tablespoons butter
Instructions
- Place carrots, potatoes, and onions in the bottom of the crockpot.
- Season chicken with paprika, salt, pepper, and Italian seasoning.
- Add chicken on top of the vegetables.
- Add garlic and pour chicken broth over the mixture.
- Top with butter.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Serve warm with juices spooned over the top.
Notes
For richer flavor, add a splash of cream at the end of cooking. Bone-in chicken works great too.
