Description

A comforting, easy Crockpot Chicken Dinner made with tender chicken, hearty vegetables, and simple seasonings for a complete one-pot meal.


Ingredients

  • 4 chicken breasts or thighs
  • 4 large carrots, sliced
  • 3 potatoes, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter

Instructions

  1. Place carrots, potatoes, and onions in the bottom of the crockpot.
  2. Season chicken with paprika, salt, pepper, and Italian seasoning.
  3. Add chicken on top of the vegetables.
  4. Add garlic and pour chicken broth over the mixture.
  5. Top with butter.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  7. Serve warm with juices spooned over the top.

Notes

For richer flavor, add a splash of cream at the end of cooking. Bone-in chicken works great too.
