- 1 tsp fresh cracked black pepper
- ½ cup cassava or all-purpose flour
- 2 tbsp extra virgin olive oil plus more as needed
- 2 tbsp butter or ghee (sub vegan butter for dairy-free)
- 4 garlic cloves, peeled and smashed
- 1 1/2 cups chicken broth
- 4 tbsp freshly squeezed lemon juice (about 2 large lemons)
- 2 tbsp capers, drained
- 2 tbsp parsley, minced for garnish
Instructions
- Season chicken breasts evenly with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Heat olive oil and butter in large skillet over medium-high heat. Brown chicken 3-4 minutes per side.
- Transfer chicken to crockpot. Add smashed garlic, chicken broth, lemon juice, and capers.
- Cover and cook on LOW for 4 hours or HIGH for 2 hours.
- Garnish with fresh parsley before serving. Serve with sauce spooned over chicken.

Tips: For thicker sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into hot sauce.
