Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 tsp kosher salt
  • 1 tsp fresh cracked black pepper
  • ½ cup cassava or all-purpose flour
  • 2 tbsp extra virgin olive oil plus more as needed
  • 2 tbsp butter or ghee (sub vegan butter for dairy-free)
  • 4 garlic cloves, peeled and smashed
  • 1 1/2 cups chicken broth
  • 4 tbsp freshly squeezed lemon juice (about 2 large lemons)
  • 2 tbsp capers, drained
  • 2 tbsp parsley, minced for garnish

Instructions

  1. Season chicken breasts evenly with salt and pepper.
  2. Dredge chicken in flour, shaking off excess.
  3. Heat olive oil and butter in large skillet over medium-high heat. Brown chicken 3-4 minutes per side.
  4. Transfer chicken to crockpot. Add smashed garlic, chicken broth, lemon juice, and capers.
  5. Cover and cook on LOW for 4 hours or HIGH for 2 hours.
  6. Garnish with fresh parsley before serving. Serve with sauce spooned over chicken.

Notes

Tips: For thicker sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into hot sauce.
