Description

This Crockpot Chicken Ramen is rich, savory, and packed with nourishing flavor, made easy in your slow cooker.


Ingredients

  • 2 lb boneless skinless chicken thighs
  • 4 cups really good quality chicken stock
  • ½ oz dried shitake mushrooms
  • 2 tsp sesame oil
  • 2 tsp grated fresh ginger
  • 2 garlic cloves, minced
  • 2 TBSP soy sauce
  • 1 tsp fish sauce
  • 2 TBSP rice vinegar
  • 4 packages of instant Ramen Noodles (discard seasoning packets)
  • Toppings:
  • Sweet Peppers
  • Green Onions
  • Shredded Carrots
  • Shredded Purple Cabbage
  • Hard Boiled Eggs
  • Sesame Seeds
  • Chopped Cilantro
  • Lime Wedges

Instructions

  1. Place chicken thighs, chicken stock, mushrooms, sesame oil, ginger, garlic, soy sauce, fish sauce, and rice vinegar in a crockpot.
  2. Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  3. Remove chicken, shred with two forks, and return to the crockpot.
  4. Cook ramen noodles separately according to package instructions, then add them to the crockpot before serving.
  5. Serve hot and top with your favorite garnishes like sweet peppers, green onions, shredded carrots, purple cabbage, hard boiled eggs, sesame seeds, cilantro, and lime wedges.
