This Crockpot Chicken Ramen is rich, savory, and packed with nourishing flavor, made easy in your slow cooker.

- 2 lb boneless skinless chicken thighs
- 4 cups really good quality chicken stock
- ½ oz dried shitake mushrooms
- 2 tsp sesame oil
- 2 tsp grated fresh ginger
- 2 garlic cloves, minced
- 2 TBSP soy sauce
- 1 tsp fish sauce
- 2 TBSP rice vinegar
- 4 packages of instant Ramen Noodles (discard seasoning packets)
- Toppings:
- Sweet Peppers
- Green Onions
- Shredded Carrots
- Shredded Purple Cabbage
- Hard Boiled Eggs
- Sesame Seeds
- Chopped Cilantro
- Lime Wedges
Instructions
- Place chicken thighs, chicken stock, mushrooms, sesame oil, ginger, garlic, soy sauce, fish sauce, and rice vinegar in a crockpot.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
- Remove chicken, shred with two forks, and return to the crockpot.
- Cook ramen noodles separately according to package instructions, then add them to the crockpot before serving.
- Serve hot and top with your favorite garnishes like sweet peppers, green onions, shredded carrots, purple cabbage, hard boiled eggs, sesame seeds, cilantro, and lime wedges.
