- 2 chicken breasts, boneless and skinless
- 8 oz uncooked spaghetti
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1 cup chicken broth
- 1/2 cup diced onion
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1 tsp salt
- 2 cups shredded cheddar cheese
- 4 oz cream cheese, softened
- 1 tbsp olive oil
Instructions
- Place chicken breasts in the crockpot and drizzle with olive oil.
- Add diced onion, cream of chicken soup, Rotel, chicken broth, garlic powder, onion powder, salt, and pepper.
- Stir gently to combine and cover.
- Cook on low for 6-7 hours or on high for 3-4 hours until chicken is fully cooked.
- Remove chicken, shred it, and return it to the crockpot.
- Add cream cheese and cheddar cheese, stirring until melted and creamy.
- Meanwhile, cook spaghetti noodles according to package instructions, then drain.
- Add cooked spaghetti to the crockpot and mix until well combined.
- Cover and cook for another 15-20 minutes on low.
- Serve warm and enjoy!
Notes
For extra flavor, sprinkle with chopped parsley or a pinch of red pepper flakes before serving.
