Description

A hearty, comforting slow-cooked beef and potato stew loaded with flavor and perfect for a cozy dinner.


Ingredients

  • 2 pounds lean chuck stew meat, cut into large bite-sized pieces
  • 1/4 cup flour
  • 2 tablespoons extra-virgin olive oil, divided
  • 3 large potatoes, peeled and chopped into large bite-sized pieces
  • 1 (14 1/2-ounce) can fire-roasted diced tomatoes, with juice
  • 1 garlic clove, minced
  • 1/2 cup onion, chopped
  • 1 teaspoon balsamic vinegar
  • 1 bay leaf
  • 1/2 teaspoon kosher or sea salt
  • 1/2 teaspoon black pepper
  • 3 to 4 cups low-sodium beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried oregano or 1 tablespoon fresh, chopped oregano leaves
  • 1 teaspoon paprika

Instructions

  1. Place beef in a bowl and toss with flour until coated.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat.
  3. Brown beef in batches, adding remaining oil as needed. Transfer to crockpot.
  4. Add potatoes, diced tomatoes with juice, garlic, onion, balsamic vinegar, bay leaf, salt, and pepper to the crockpot.
  5. Pour in beef broth until ingredients are just covered (about 3 to 4 cups).
  6. Stir in Worcestershire sauce, oregano, and paprika.
  7. Cover and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender and potatoes are cooked through.
  8. Remove bay leaf before serving.

Notes

Serve with crusty bread or over rice for a heartier meal.
