- 2 pounds lean chuck stew meat, cut into large bite-sized pieces
- 1/4 cup flour
- 2 tablespoons extra-virgin olive oil, divided
- 3 large potatoes, peeled and chopped into large bite-sized pieces
- 1 (14 1/2-ounce) can fire-roasted diced tomatoes, with juice
- 1 garlic clove, minced
- 1/2 cup onion, chopped
- 1 teaspoon balsamic vinegar
- 1 bay leaf
- 1/2 teaspoon kosher or sea salt
- 1/2 teaspoon black pepper
- 3 to 4 cups low-sodium beef broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried oregano or 1 tablespoon fresh, chopped oregano leaves
- 1 teaspoon paprika
Instructions
- Place beef in a bowl and toss with flour until coated.
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Brown beef in batches, adding remaining oil as needed. Transfer to crockpot.
- Add potatoes, diced tomatoes with juice, garlic, onion, balsamic vinegar, bay leaf, salt, and pepper to the crockpot.
- Pour in beef broth until ingredients are just covered (about 3 to 4 cups).
- Stir in Worcestershire sauce, oregano, and paprika.
- Cover and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender and potatoes are cooked through.
- Remove bay leaf before serving.
Notes
Serve with crusty bread or over rice for a heartier meal.
