A cozy and decadent Crockpot French Toast Casserole—perfectly soft on the inside, topped with buttery cinnamon sugar and crunchy pecans.
Ingredients

- 24 ounces stale Brioche bread (about a loaf and a half)
- ½ cup chopped pecans (optional)
- 8 large eggs
- 3 cups whole milk
- ¼ cup real maple syrup
- 1 tablespoon pure vanilla extract
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- Topping:
- ½ cup butter (sliced)
- ½ cup packed brown sugar (light or dark)
- 1 teaspoon ground cinnamon
Instructions
- Grease the inside of your Crockpot with nonstick spray or butter.
- Cube the stale Brioche bread and add to the Crockpot.
- In a large bowl, whisk together eggs, milk, maple syrup, vanilla, salt, cinnamon, and nutmeg.
- Pour the mixture evenly over the bread cubes, gently pressing down to soak.
- Sprinkle chopped pecans on top (if using).
- In a small bowl, mix together the topping ingredients: sliced butter, brown sugar, and cinnamon. Scatter evenly over the casserole.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until set and golden on top.
- Serve warm with extra maple syrup if desired.
