Description

A cozy and decadent Crockpot French Toast Casserole—perfectly soft on the inside, topped with buttery cinnamon sugar and crunchy pecans.


Ingredients

Scale
  • 24 ounces stale Brioche bread (about a loaf and a half)
  • ½ cup chopped pecans (optional)
  • 8 large eggs
  • 3 cups whole milk
  • ¼ cup real maple syrup
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • Topping:
  • ½ cup butter (sliced)
  • ½ cup packed brown sugar (light or dark)
  • 1 teaspoon ground cinnamon

Instructions

  1. Grease the inside of your Crockpot with nonstick spray or butter.
  2. Cube the stale Brioche bread and add to the Crockpot.
  3. In a large bowl, whisk together eggs, milk, maple syrup, vanilla, salt, cinnamon, and nutmeg.
  4. Pour the mixture evenly over the bread cubes, gently pressing down to soak.
  5. Sprinkle chopped pecans on top (if using).
  6. In a small bowl, mix together the topping ingredients: sliced butter, brown sugar, and cinnamon. Scatter evenly over the casserole.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until set and golden on top.
  8. Serve warm with extra maple syrup if desired.
