Ingredients
Scale
- 3 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
- 4–6 garlic cloves, peeled and smashed
- 1 cup chicken broth (or vegetable broth for a vegetarian option)
- 1/2 cup unsalted butter, cut into pieces
- 1/2 cup sour cream (or cream cheese for extra creaminess)
- 1/2 cup whole milk or heavy cream (more for a thinner consistency)
- Salt and pepper to taste
- Optional: fresh herbs (like parsley or chives) for garnish
Instructions
- Add potatoes, garlic, and chicken broth to the crockpot.
- Cover and cook on high for 3-4 hours or on low for 6-7 hours, until potatoes are tender.
- Drain excess broth if needed, leaving a small amount for mashing.
- Add butter, sour cream, and milk.
- Mash potatoes until smooth and creamy, adding more milk if a thinner consistency is desired.
- Season with salt and pepper to taste.
- Garnish with fresh herbs if desired before serving.
Notes
For extra flavor, roast the garlic before adding it to the crockpot. Adjust creaminess by adding more milk or cream as needed.
