- 1 lb ground beef
- 1 onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, chopped
- 3 potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup frozen green beans
Instructions
- In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
- Transfer the cooked beef to the crockpot.
- Add onion, carrots, celery, potatoes, diced tomatoes, tomato sauce, beef broth, Italian seasoning, garlic powder, salt, and pepper.
- Stir to combine all ingredients well.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until vegetables are tender.
- In the last 30 minutes of cooking, stir in the frozen green beans.
- Taste and adjust seasoning before serving.
