Description
This Crockpot Pancake Casserole is a deliciously cheesy, savory breakfast twist you can make ahead in your slow cooker—perfect for brunch or lazy weekends!
Ingredients

- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 Tbsp sugar
- 1 Tbsp melted butter or oil
- 1/2 cup milk
- 2 Tbsp maple syrup
- 1 egg
- 1 cup shredded cheddar cheese, divided
- 5 pieces of bacon, cooked and crumbled
Instructions
- In a bowl, whisk together flour, baking powder, salt, and sugar.
- Add melted butter or oil, milk, maple syrup, and egg. Mix until just combined.
- Stir in half of the shredded cheddar cheese and all of the crumbled bacon.
- Grease the inside of the crockpot or line with parchment paper.
- Pour the batter into the crockpot and spread evenly.
- Top with the remaining shredded cheese.
- Cook on low for 2–3 hours or until the center is set and edges are golden.
- Let cool slightly before slicing and serving.
Notes
You can prep this the night before and start cooking in the morning. For extra flavor, try adding diced green onions or a dash of smoked paprika.
