Description

This Crockpot Pancake Casserole is a deliciously cheesy, savory breakfast twist you can make ahead in your slow cooker—perfect for brunch or lazy weekends!


Ingredients

Scale
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp sugar
  • 1 Tbsp melted butter or oil
  • 1/2 cup milk
  • 2 Tbsp maple syrup
  • 1 egg
  • 1 cup shredded cheddar cheese, divided
  • 5 pieces of bacon, cooked and crumbled

Instructions

  1. In a bowl, whisk together flour, baking powder, salt, and sugar.
  2. Add melted butter or oil, milk, maple syrup, and egg. Mix until just combined.
  3. Stir in half of the shredded cheddar cheese and all of the crumbled bacon.
  4. Grease the inside of the crockpot or line with parchment paper.
  5. Pour the batter into the crockpot and spread evenly.
  6. Top with the remaining shredded cheese.
  7. Cook on low for 2–3 hours or until the center is set and edges are golden.
  8. Let cool slightly before slicing and serving.

Notes

You can prep this the night before and start cooking in the morning. For extra flavor, try adding diced green onions or a dash of smoked paprika.
