Ingredients
- 1 pound chicken breasts or thighs
- 12 ounces chicken sausage, cut into 1-inch pieces
- 1 cup low-sodium chicken broth
- 1 bell pepper, diced
- 1 celery stalk, sliced
- 1/2 cup onion, diced
- 1 garlic cloves, minced
- 15 ounces diced tomatoes with juices
- 1 tablespoon paprika
- 1 1/2 teaspoon salt (or more)
- 1 1/2 teaspoons thyme
- 1 1/2 teaspoons red pepper flakes
- 1 jalapeno, sliced (optional for garnish)
Instructions
- Place chicken pieces in the bottom of your crockpot.
- Add sausage, bell pepper, celery, onion, and garlic on top of the chicken.
- In a small bowl, mix together chicken broth, diced tomatoes, paprika, salt, thyme, and red pepper flakes.
- Pour the liquid mixture over the ingredients in the crockpot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- When done, shred the chicken with two forks directly in the pot.
- Stir everything together and let it sit for 10 minutes to absorb flavors.
- Garnish with sliced jalapenos if desired before serving.

Tips: For extra heat, add an additional teaspoon of red pepper flakes. If you prefer milder flavor, reduce the red pepper flakes to 1/2 teaspoon.
Substitutions: Turkey sausage works well as an alternative to chicken sausage. You can also use vegetable broth for a lighter version.
