Description
A cozy, comforting crockpot tomato soup paired with classic grilled cheese sandwiches — perfect for chilly days and easy weeknight dinners.

- 2 (28 oz) cans Nature’s Promise Whole Peeled Tomatoes
- 1 (6 oz) can tomato paste
- 1 medium onion, finely chopped
- 4 cloves garlic, chopped
- 2 cups low-sodium vegetable broth
- 2 tsp dried oregano
- 1/2 tsp sugar
- 1/4 tsp salt
- Cooking spray
- 8 slices whole grain bread
- 8 slices American or Cheddar cheese
- 1/2 cup low-fat milk
- 2 tbsp unsalted butter, cut up
Instructions
- Spray the inside of your crockpot with cooking spray.
- Add the peeled tomatoes, tomato paste, chopped onion, garlic, vegetable broth, oregano, sugar, and salt to the crockpot.
- Stir to combine and cook on low for 6–8 hours or high for 3–4 hours.
- Use an immersion blender to puree the soup until smooth, or carefully blend in batches in a regular blender.
- Stir in the milk and let the soup warm through for another 10 minutes.
- While the soup finishes, prepare the grilled cheese sandwiches by placing cheese between bread slices and grilling with butter in a skillet until golden brown on both sides.
- Serve the soup hot with the grilled cheese on the side for dipping.
Notes
Add a pinch of red pepper flakes for heat or a splash of cream for extra richness. Perfect for batch cooking and freezing!
