Description

A cozy, comforting crockpot tomato soup paired with classic grilled cheese sandwiches — perfect for chilly days and easy weeknight dinners.


Ingredients

  • 2 (28 oz) cans Nature’s Promise Whole Peeled Tomatoes
  • 1 (6 oz) can tomato paste
  • 1 medium onion, finely chopped
  • 4 cloves garlic, chopped
  • 2 cups low-sodium vegetable broth
  • 2 tsp dried oregano
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • Cooking spray
  • 8 slices whole grain bread
  • 8 slices American or Cheddar cheese
  • 1/2 cup low-fat milk
  • 2 tbsp unsalted butter, cut up

Instructions

  1. Spray the inside of your crockpot with cooking spray.
  2. Add the peeled tomatoes, tomato paste, chopped onion, garlic, vegetable broth, oregano, sugar, and salt to the crockpot.
  3. Stir to combine and cook on low for 6–8 hours or high for 3–4 hours.
  4. Use an immersion blender to puree the soup until smooth, or carefully blend in batches in a regular blender.
  5. Stir in the milk and let the soup warm through for another 10 minutes.
  6. While the soup finishes, prepare the grilled cheese sandwiches by placing cheese between bread slices and grilling with butter in a skillet until golden brown on both sides.
  7. Serve the soup hot with the grilled cheese on the side for dipping.

Notes

Add a pinch of red pepper flakes for heat or a splash of cream for extra richness. Perfect for batch cooking and freezing!
