			- 1 pound ground turkey
 - 1/2 cup breadcrumbs
 - 1 egg
 - 2 cloves garlic, minced
 - 1 tablespoon ginger, grated
 - 2 tablespoons curry powder
 - 1 teaspoon ground cumin
 - 1 teaspoon paprika
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 2 tablespoons olive oil
 - 1 onion, finely chopped
 - 1 can (14 oz) coconut milk
 - 1 can (14.5 oz) diced tomatoes
 - 1 tablespoon tomato paste
 - 1/2 teaspoon cayenne pepper (optional)
 - Fresh cilantro, chopped (for garnish)
 - Cooked rice or naan bread, for serving
 
Instructions
- In a large bowl, combine ground turkey, breadcrumbs, egg, garlic, ginger, 1 tablespoon curry powder, salt, and pepper. Mix until just combined and form into meatballs.
 - Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then transfer to a plate.
 - In the same skillet, sauté onion until soft. Stir in remaining curry powder, cumin, paprika, and cayenne pepper. Cook for 1-2 minutes until fragrant.
 - Add diced tomatoes, tomato paste, and coconut milk. Stir well and bring to a simmer.
 - Return meatballs to the skillet, cover, and simmer for 20 minutes until cooked through and sauce is thickened.
 - Garnish with fresh cilantro and serve with rice or naan bread.
 
Notes
For extra flavor, let the meatballs rest in the curry sauce for a few minutes before serving. Adjust spice level to your taste.
