Ingredients

  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour an 8-inch cake pan.
  3. Combine chopped dates, boiling water, and baking soda. Let sit 10 minutes.
  4. Cream butter and sugar until light and fluffy.
  5. Add eggs one at a time, beating after each addition.
  6. Stir in vanilla.
  7. In a separate bowl, mix flour, baking powder, and salt.
  8. Add dry ingredients to wet mixture, stirring just until combined.
  9. Fold in the soaked dates and their liquid.
  10. Pour batter into the prepared pan.
  11. Bake for 35–40 minutes or until a toothpick comes out clean.
  12. Cool before slicing and serving.

Notes

For extra depth, add a pinch of cinnamon or serve warm with caramel sauce.
