- 1 1/2 cups chopped dates
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour an 8-inch cake pan.
- Combine chopped dates, boiling water, and baking soda. Let sit 10 minutes.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating after each addition.
- Stir in vanilla.
- In a separate bowl, mix flour, baking powder, and salt.
- Add dry ingredients to wet mixture, stirring just until combined.
- Fold in the soaked dates and their liquid.
- Pour batter into the prepared pan.
- Bake for 35–40 minutes or until a toothpick comes out clean.
- Cool before slicing and serving.
Notes
For extra depth, add a pinch of cinnamon or serve warm with caramel sauce.
