Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 8 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 6 cups vegetable broth
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon chili flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté for 3-4 minutes until fragrant.
  3. Stir in carrots, celery, and zucchini, cooking for another 5 minutes.
  4. Pour in vegetable broth and season with turmeric, salt, pepper, and chili flakes.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
  6. Stir in parsley, dill, and cilantro.
  7. Add lemon juice just before serving.
  8. Serve warm as a detoxifying and comforting soup.

Notes
