Ingredients

- 2 tablespoons olive oil
- 1 large onion, chopped
- 8 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, diced
- 6 cups vegetable broth
- 1 teaspoon turmeric
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon chili flakes (optional)
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté for 3-4 minutes until fragrant.
- Stir in carrots, celery, and zucchini, cooking for another 5 minutes.
- Pour in vegetable broth and season with turmeric, salt, pepper, and chili flakes.
- Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
- Stir in parsley, dill, and cilantro.
- Add lemon juice just before serving.
- Serve warm as a detoxifying and comforting soup.
Notes
This soup can be enjoyed as a light detox meal or starter. Adjust garlic to taste for a stronger flavor.
